Last night, I decided I wanted pancakes. Not the box kind. The made from scratch, delicious kind. Eggless. Was that possible? Yes! These pancakes are golden brown on the outside. They taste awesome, too. Now, adding syrup....that takes this recipe to a whole new level....a delicious new level.
Makes about 24 mini pancakes.

Ingredients
2 and 1/4 cups Flour
3 and 1/2 tsp. Baking Powder
1 tablespoon Sugar (This doesn't make it very sweet. If you don't use syrup, add more sugar!)
1/4 tsp. Salt
1 to 2 cups Milk
2 tsp. Vinegar
3Tbs Melted Butter
Directions
Mix together all your dry ingredients. (Flour, sugar, salt, and baking powder.)
Make a well for your wet ingredients. (Milk, vinegar, and melted butter.)
Pour your wet ingredients into the well.
Stir together...if your mixture is way too dry, don't freak. Simply add milk to thin it out.
Turn your griddle onto 300 Degrees F.
Using a 1/3 of a cup measuring cup, plop batter onto griddle.

Flip when side is golden brown.
Serve with maple syrup.
