The Perfect Chocolate Cupcakes


   This recipe is simple and super full of chocolate goodness.  My favorite dessert is cupcakes.  You can experiment with toppings, cakes, and frosting.  Every cupcake baker needs a simple, chocolate cupcake that works.  This recipe is the one that fits that last line, perfectly!

   As an eggless baker, I go through a lot if trial and error processes.  It's all worth it! This recipe proves it!  
By the way.....that picture is of trail mix cupcakes.  You can make them by using this cake recipe, this vanilla frosting  recipe and adding melted chocolate, and topping with a few salty snacks (pretzels and popcorn....) 


Chocolate Cupcakes
Makes 36 mini Cupcakes
Ingredients
1 1/2 cups Flour 
2/3 cup of Sugar
1 tsp. Baking Soda 
1 tsp. Salt
1/3 cup Unsweetened Cocoa Powder
1/2 cup Vegetable or Canola Oil
1 tsp. Vanilla 
1 cup Water
1 Tbs. Vinegar ( I used apple cider vinegar.) 
Directions
Preheat your oven to 350F.
In a medium mixing bowl, combine your dry ingredients.  Mix.
In a large mixing bowl, whisk together your wet ingredients.
Slowly, mix the dry ingredients into the wet ingredients.
Line a cupcake pan with paper liners or lightly grease.
Scoop your cupcake mixture into each cupcake holder. (I fill mine 2/3 of the way.)
Pop in the oven for 15-20 minutes.  (Baking time will depend on the size of cupcakes.)
Let cool.
Frost with a desired frosting. (optional)
