Breakfast Party Tacos




     Good morning tacos bursting with healthy (and delicious!) vegetables, cheesy scrambled eggs, and flavor!  That's a good breakfast to wake up to.



   Lately I've been pinning, pinning on Pinterest (You can follow me here.)  Pinning all these recipes really got me hungry.  A breakfast taco pin caught my eye (and made my stomach grumble with delight) with its bright colors and concept.  Tacos for breakfast?  Really?  I'm in.  My mom (Thank you Mom! Love you!)  drove to the store for eggs so I could make this.  It had to be really good!  It was, my family downed them with smiles.

   Perfectly spiced zucchini, tomatoes, ham, and shallots blend great with cheesy eggs.  The crunch of the tortilla...delicious.  The hot sauce spices it up.

Breakfast Party Tacos
Serves 4
1 Tomato
1 Zucchini, shredded
3 Shallots, diced
1/2 cup Cooked Ham
5 eggs
4 Soft Tortilla Shells
1/3 cup Cheddar Cheese, shredded
1/4 tsp. Garlic Powder
Salt and Pepper to taste
Hot Sauce (optional)

1.  Cook your shredded zucchini and shallots on medium high on top of a stove, stirring constantly.  Slice tomato into eighths.  Add tomato and ham once zucchini and shallots have been cooking for at least five minutes to prevent the tomatoes from becoming mushy.  Add salt, pepper, and garlic powder.
Remove from heat once cooked.

2.  Crack eggs.  Whisk.  Add salt and pepper to taste.  Scramble eggs on medium heat.  When eggs are almost fully scrambled, add cheddar cheese.

3.  If desired lightly toast tortilla shells.

4.  Divide eggs upon tortilla shells.  Top with vegetable mixture.  If desired drizzle with hot sauce.
