Coleslaw Salad. When you read that, what do you think? I think crisp, crunchy vegetables with sweet hints of cherries, and a light garlic vinaigrette to balance it all out.
This isn't your typical coleslaw. This is a crunchy salad full of that delicious coleslaw flavor. Sweet and Tangy!
Now, let's talk about all the wonderful things you can do with this salad. You can of course use it as a salad. I love topping my sandwiches (especially BBQ ones) with this. This salad is super light, so you can use as a side for heavy meals. The possibilities are endless!
Servings- 12 (using a 1/2 cup serving)
Crunchy Coleslaw Salad(see notes for vinaigrette.)
Ingredients
6 cups Shredded Cabbage ( You can buy the shredded cabbage and carrot mixture.)
Dried Cherries (to your liking)
Blue Cheese (to your liking)
Vinaigrette- this (like many of the other ingredients) is an ingredient with amounts depending on your liking, so I am only giving the ratio of ingredients for the dressing.
Oil to Vinegar- 3:1
Garlic Salt and Pepper to taste.
Directions
Mix together the cabbage, cherries, and
blue cheese.
Whisk together your oil and vinegar. Add the garlic salt and pepper and stir.
Lightly toss your cabbage mixture in your vinaigrette.
Enjoy!
