Apple Oat Muffins


   This recipe has never failed.  Seriously. I could eat the muffin batter or the actual muffin.  Either way, yum!  Just ask my family who observed me "taste testing" a whole muffin.  However my taste testing technique evened out when someone in my family, not going to name any names, ate half of the muffins....in a matter of 24 hours. True story!  You get the idea.  This muffin recipe is waiting for you to make it. 

Apple Oat Muffins
Ingredients
1 cup Rolled Oats
1 cup Applesauce 
1/2 cup Milk
1/4 cup Plain Greek Yogurt
1 teaspoon Vanilla
4 Tablespoons Butter (melted)
1/4 cup Sugar
3/4 cup Whole Wheat Flour 
1 teaspoon Baking Powder
1/2 teaspoon Baking Soda
1/4 teaspoon salt
1 teaspoon Cinnamon
Dried Cherries or Cranberries (optional)
Directions
Preheat oven to 375F.
Stir together the wet ingredients (applesauce, milk, yogurt, vanilla, and butter), oats, and sugar.  
In a separate bowl, mix together the remaining ingredients. (flour, baking soda and powder, salt, cinnamon, and cherries/cranberries, if using).  
Make a well in the flour mixture.  Pour in the apple mixture.  Stir together. (Not too long, though.) 
Bake for 15-20 minutes.
