Refreshing. That's what I would use to describe this salad. Refreshing, very refreshing. Perfect for a day like today. It actually reached 80 degrees (F) today! After a hot day, I was ready for a light and refreshing side dish to go with our summer meal. Salad! Yes, I decided to make salad. Not just any salad, though. This light, Mexican inspired salad with sweet, little corn kernels, black beans, salsa, and salty chunks of feta cheese is the best a summer salad can get.
Corn, Black Bean, and Tomato Salad
Ingredients
1 cup Tomato Salsa (I like the fresh, refrigerated kind.)
3 1/2 Cobs of Corns
2 cups Black Beans
4 Tbs. Feta Cheese
Mixed Greens (to your liking)
Tortilla Chips for Serving (optional)
Directions
Mix together the salsa and black beans.
Microwave your cobs of corn. Cut the corn of the cob and mix in with your black beans and salsa.
Add your feta. Mix.
Fill a plate with mixed greens. Top with salad.
Serve with chips.
Enjoy!
