Potato Pancakes



    You need to try these, guys.  Seriously.  If you answer yes to any of the following questions, these potato pancakes are in need of frying up.

1. Are you not a sweet breakfast person?
2. Do you like savory flavors?
3. Do you like mixing sweet(maple syrup) with savory?
4. Do you like trying new things?
5. Do you twists on an old favorite?

   I recently had a day off school and had a vary lazy morning.  When I finally decided to make breakfast, I had all the time in the world and a small amount of mashed potatoes in the fridge.
All the time in the word+mashed potatoes=potato pancake time!
Potato Pancakes(Makes about 2/3 dozen small pancakes)
Ingredients
1 cup Mashed Potatoes
1 egg, lightly beaten
5 Tbs. Flour to begin with(more may be needed)
1/4 cup Parmasean Cheese
A few Tablespoons of Oil for Frying
Dash of Salt
Sour Cream, maple syrup, jam, etc for topping.
Directions
Mix together the potatoes and egg. Add flour.  Mix.
Mix in the cheese and garlic salt.
Heat your pan and oil for frying.
Lightly water your hands and roll the mixture into balls.  If the mixture is too sticky, add flour. Pat down, slightly, depending on how thick you like your pancakes,
Add to oil.  When the potato pancake is easy to move with a spatula, it is most likely ready to flip.
Serve with your choice of toppings.
